There are different #vacuumpackaging requirements for different food, including: cause of corruption (light, water or oxygen, etc.), shape of product, surface hardness of product, storage Conditions, sterilization temperature, etc.

I will introuduce the structure of vacuum bag (or vacuum film) for reference.

  1. An application with a regular shape or a soft surface, like meat sausage products, soy products, etc.
  • We suggest following structures:

OPA/PE (high temperature resistant PE)

This structure has excellent adaptability and a better vacuuming effect without changing the shape of the product.

Will the plastic packaging going hard in Germany in 2019?

24/10/2018, the E.U. has voted for a complete ban on a range of single-use plastics across the union in a bid to stop pollution of the oceans. The proposal is a #banonplastic cutlery and plates, cotton buds, straws, drink-stirrers and balloon sticks, it also calls for a reduction in single-use plastic for food and drink containers like plastic cups.

It could take up to 5 years for the regulation to go into effect. But Germany government response policy rapidly.

On 1/1/2019, the new #GermanPackaging Act (“ GPA ”) enters into force, producers and all other economic operators who market packaged products in Germany have to comply with the new law.

Without proper registration in https://lucid.verpackungsregister.org/, packaging and participate in a disposal and recycling system.producers or retailers must not offer the packaging, even if the product is imported abroad.

The #recyclepackaging is one of the options for the plastic packaging sellers in Germany.

Different vacuum for sous vide cooking

When you choose #sousvidecooking, #vacuum is a nessary part of it.

Theoretically, air presence in the #sousvidepouch , food will decrease heat transfer fates and retard heating, and the left oxyen will case the grown of the bacteria, which shelf time will be shorten. In fact, if over vacuum, the flavor and the shape of sous vide food will not so good.

The flavor. “Every protein needs a different #vacuum, Plus, if it’s bone-in, it needs a different vacuum.——Tom Schurig”. It’s better to not vacuum to much for bone. For bone will be more tasty when combined with oxygen. What’s more, it’s easily pierce the bag.

The shape. Some food is very soft, over vacuum will compress the food into food cake. “Salmon is a relatively delicate fish, and when you vacuum seal the bag it’s possible to compress the flesh. You’ll end up with fish cakes and not the delicious, delicate flaky fish you were hoping to enjoy.——Dale Prentice”.

Vacuum is a skill work of sous vide cooking.
